100% Cortese (Gavi)
The Gavi, a 100% white wine produced by Cortese grapes, comes from the DOCG Gavi, which extends around the historic Fort Gavi.
Gavi is also often referred to as the white jewel in the crown of Piemonte, although the fruity light style is reminiscent of the nearby Ligurian white wines.
Roberto Sarotto produces the Gavi AURORA to honor his wife Aurora, from the grapes that grow on his estate Tenuta Manenti. The grapes are pressed after the harvest and the fermentation is prolonged. Additional aromas and structure the wine receives through the prolonged storage on the yeast - SUR LIE.
Production: 15,000 bottles
