The vineyards for the Chianti POGNI lie on the gentle hills around the estate of Fattoria Pogni.

In order to increase the intensity of the flavors, the green grapes are carefully selected by cutting the less trained grapes in July / August and reducing the yield.

The grapes are harvested by hand and are immediately removed from the wine cellar. The ground grapes remain in the temperature-controlled stainless steel tank for 15 days and are pumped twice daily to extract the full color.

After the pressing, the wine completely closes the fermentation until the end of the year and remains for a further 11 months to mature in the steel tank.

After filtration and bottling, the wine ripens for another 3 months in the bottle before it goes on sale.
