La Querce - DAMA ROSA Passito Toscana IGT 2011
The vineyards are mainly south-facing in the open Sorettole valley. The loamy soils and the constant light breeze give a good balance of cooling and moisture for the maturation of the grapes.
For the damama Rosa, only Canaiolo grapes are harvested as late leaves, depending on the year 35-40 days of drying before they are gently ground and pressed after only one night. This is followed by a 28-day fermentation in the temperature-controlled stainless steel tank and a ripening for 16 months in the French barrique. After the Passito is filtered and bottled, it has a residual sugar of more than 220g / l and ripes again 6 months in the bottle before it goes on sale.
In the glass, the Passito shows a very deep ruby red with distinct brown tones
