Roberto Sarotto is known for his innovative ideas and this Nebbiolo is a very successful example. The grapes are fermented in a classical manner on the peel and then pressed. The finished fermented wine is added in the Ripasso process Nebbiolo pomace - which still contains a lot of sugar and flavorings - and thus starts a new alcoholic fermentation.
The wine gets more body and flavors, the tannins are also softer.
Until bottling, the wine ripens 2 months in the steel tank and 6 months in wood.
