Persistent spicy Valpolicella Ripasso red wine from Fernando Campagnola

40% Corvina, 30% Corvinone, 30%, Rondinella
For the Ripasso, the marc of Amarone is used, which still has intense aromas and fruit notes. A Valpolicella Superiore is given over the Amarone pomace and rinsed for 8-10 days, this enrichment is completed with a renewed fermentation. This produces strong, concentrated dry wines with intense fruit aromas, which are often referred to as small Amarone.
The vineyards and the historic wine cellar are cultivated with absolute passion at Corte Archi. Dedication, enthusiasm, love - are the family values.
The basic wine undergoes a brief maceration for 15 days and subsequent storage in the steel tank. In the spring the second maceration on the Amarone pomace takes place for another 12 days. At the end of the second fermentation the ripening follows for 18 months in barrels of Slovenian oak
