Rocca Sveva - Amarone della Valpolicella Riserva DOCG 2015

For the Amarone, only the best grapes are harvested by hand in the first half of October. The grapes are stored in small boxes for at least three months in temperature-controlled rooms and gently dried. When the grapes have lost between 20-40% of the moisture, the berries are separated from the stems. After pressing, gentle fermentation takes place for 25-30 days. In between, the still unfinished wine is separated from the pomace.

The maturation takes place for 24 months in barriques and after the assemblage another twelve months in the bottle.
