Set in the best locations for Moscato d'Asti, the agritourismo Ca'd'Gal Alessandro Boido is framed by its vineyards. The Moscato by Alessandro Boido are distinguished by their finesse and the distinctive notes of fire stones and white flowers, which express only the best locations. Moscato d'Asti was to be drunk as young as possible and is not intended for storage, so was the view, at least until Alessandro showed how perfectly a premium Moscato can mature. We had our first matured Moscato in 2015, a Ca d'Gal Vigna Vecchia 2007. After initial skepticism - whether we would like to subdue a cellar find - we were inspired by the freshness, aromatics and the perfect acid-sweet balance, which we still have With no Moscato before. For Moscato d'Asti, the grapes are stored on dry ice after the harvest, mostly in the vineyard, and immediately placed in large refrigerated cells on arrival in the wine cellar. The grapes are pressed and the sweet juice is stored in stainless steel tanks near the freezing point. Moscato d'Asti is typically not immediately produced, but adapted to the needs of the customers in order to preserve the fresh aromas and sparklingness and to fill the wine as young as possible. The grape juice is filled into open autoclaves, heated with the addition of broths until the fermentation starts. As soon as an alcohol content of approx. 3% is reached, the autoclave is sealed and the carbon dioxide of the fermentation is stored in the wine. Typically at 5% alcohol, the fermentation is stopped by rapid cooling and after a stabilization time the wine is filtered and bottled. This creates the light, delicate sparkling (moussierende) wine with delicate remedies.
